The consumption pattern of the people in Indonesia is experiencing a shift. Consumption patterns that are influenced by socio-cultural factors today make tend to consume food and drinks practical easy obtain. This began 2014 until now, making percentage increase 2.5% per year. Bread finished whose demand has also increased. Due development middle-class population, an income young people, society's pattern, which increasingly shifting urban pattern. bread industry still classified as small medium enterprises (SME) sector. Small business sector with significant impact on improving economy developing countries. products distributed offices work bakeries sold stores. shows shop production must quickly meet consumer surrounding area. In fulfilling demand, quality control process required workstation reduce defective products. study aims carry out faulty using chart concept kaizen maintain SMEs so effectiveness can be realized.
